Chocolate - coated Date Ice Cream spheres
- 1.5 cup boiling water
- 1 tsp baking soda
- 250g pitted dates
- 80g crushed walnuts
- 1 tsp ground cinnamon
- 1 tsp ground cardamom
- 2 500ml buckets of London Dairy’s Caramel Crunch ice cream
- Melted chocolate
- Use a silicon sphere mold, and coat the inside of each mold with the melted chocolate. Then allow to freeze until firm.
- In the meantime, add the boiling water and baking soda over the dates and leave to soak for about 30 minutes until softened, then mix to form a paste.
- Add the spices over the date paste, then mix into the ice cream, before adding the walnuts and mixing more, to create a soft mixture
- Scoop the ice cream mixture into each chocolate covered prepared mold, then freeze again for 8 hours or overnight until fully set.
- Remove from mold gently, and dig in!
