Chocolate - coated Date Ice Cream spheres
  • 1.5 cup boiling water
  • 1 tsp baking soda
  • 250g pitted dates
  • 80g crushed walnuts
  • 1 tsp ground cinnamon
  • 1 tsp ground cardamom
  • 2 500ml buckets of London Dairy’s Caramel Crunch ice cream
  • Melted chocolate
  • Use a silicon sphere mold, and coat the inside of each mold with the melted chocolate. Then allow to freeze until firm.
  • In the meantime, add the boiling water and baking soda over the dates and leave to soak for about 30 minutes until softened, then mix to form a paste.
  • Add the spices over the date paste, then mix into the ice cream, before adding the walnuts and mixing more, to create a soft mixture
  • Scoop the ice cream mixture into each chocolate covered prepared mold, then freeze again for 8 hours or overnight until fully set.
  • Remove from mold gently, and dig in!
